Chocolate Peanut Butter Pie

I made this yesterday for one of my circle sister's birthday.

Chocolate Peanut Butter Pie

1 pre-made graham or cookie crumb crust (I made mine with oatmeal, oatmeal cookies, brown sugar, salted peanuts and margerine)

1 (16oz) pkg soft unflavored tofu
2/3 cup soft peanut butter
1/2 cup sugar
1 tsp vanilla
1 cup chocolate chips, melted and allowed to cool slightly

Puree tofu, peanut butter, sugar and vanilla in a food processor until smooth and well mixed. Then pour chocolate into running processor gradually and allow to run until well mixed. Pour mixture into prepared crust and refrigerate until set. (It took about an hour and a half).


The next time I make this I think I will probably slice bananas into the crust before adding the chocolate mixture and top it with whipped cream. It is very rich.

I bet that would be awesome with homemade ice cream too!
