I think the reason that it's hard to find non-Wiccan books on Witchcraft is because people tend to use the terms Wiccan and Witch interchangeably. There are people, usually non-pratitioners, that assume that because you are one, you're also the other; that the two are the same thing. It's a result of misinformation.
All Wiccans are witches, but not all witches are Wiccan.
I think to help find non-Wiccan books, you'll probably want to choose books based on specific traditions. If you've got access to a library, or can download PDFs, why not pick at least one book from each tradition that you can find? If you don't know which tradition you want to follow, this will help you gain a bit of knowledge to help you choose.
