This is my all-time cold weather favorite soup. The 20 minute prep is therapeutic.
PEA SOUP
In a 2 quart saucepan, sauté in 1tablespoon olive oil, until celery and onion soften, about 3 minutes:
1 small yellow onion, diced
1 large stalk celery, diced
1 med.to large carrot, diced
3 small sausage links, diced
1/8 tsp coriander seed (this is the secret ingredient & gives a surprising zip of lemon, don't over do or it spoils the surprise)
Add 1 - 2 cups dried peas (I use 2 cups for thicker soup)
1 cup frozen corn kernels (another secret ingredient, for sweetness)
2 chicken or veg. bouillon cubes, or 1 cup stock to replace 1cup water
2 cups water, add more if needed while it cooks
Simmer covered 1- hour (or a bit more, if your dices were large)
Use a hand blender to mash it up a bit if you like. Can be served with bread or crackers, but I like it by
itself. Follow with a chocolatey desert of any kind and your taste buds will bless you. It's pure comfort food when the weather turns nasty.
The meat used will alter the flavor substantially. Use whatever you like best. I've used bacon, Jimmy Dean sausage, ham, mild italian braats, ham-loaf and Spam. Never found one that didn't work.
QUICK PEA SOUP
Combine in 2 quart saucepan:
1 box frozen peas
1tsp mint leaves
1 pinch coriander seeds
2 cups water
2 chicken bouillon cubes
Salt and pepper
Bring all to boil, simmer 20 minutes, and mash with hand blender.

Yes, simple vegetable soups are great! I like all kinds- pea, lentil, bean, creamy broccoli or pumpkin, tomato... They are so warming now in winter.

This soup is something I definitely want to try weekend. I'm a really bad cook,but I hope I'll get it right.
Also,spinach soup is great. We actually make it a little bit souer,with a lot of lemon juice,but originally it'seems sweet. It can be eaten cold,in the summer and hot in the winter![loveface loveface](images/smilies/loveface.gif)

Mmm-mm, i love vege soup made from scratch, and swear that cut cabbage adds a lot to the flavor. Mom's best was always the soup made from leftovers from the past week. It always worked out somehow. She used tomato juice for stock. We named it "rummage soup" at our house, for rummaging around in the fridge to use up odds n' ends.

I had potato soup for dinner today which made me feel cozy and later I drunk calming tea. I'm so sleepy now! I feel I'll sleep like a baby tonight.
