These are very soft, moist and spicy- and no eggs. they also make your kitchen smell great while baking.
15 oz can pumpkin (not pie filling)
1/2 cup butter
1 cup sugar
1 teaspoon vanilla
1 teaspoon baking powder
1 teaspoon baking soda
1 tablespoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ground cloves
2 cups flour
1/2 cup chopped walnuts
1/2 cup chopped dried cranberries or cherries
Preheat oven to 375. Cream together butter and sugar, add pumpkin, vanilla, baking powder, baking soda, and spices, mixing well after each addition. Add flour and mix well. Stir in nuts, chocolate chips and cherries. Drop batter by teaspoonfuls onto greased cookie sheets and make 15 to 20 minutes.
You could cut down on the spices or eave the fruit or nuts out if you want to, but I am certain that it is very good luck to put in extra chocolate chips.
