Whipped cream and eggnog

Home made Whipped Cream

1 cup heavy cream or whipping cream (same thing, but don't use coffee cream)
1-2 Tablespoons confectioner's sugar (if you want it a little sweet)
1/2 teaspoon vanilla, lemon or almond extract or any sweet liqueur (whatever flavor you want it to have if you want one, but if you use a liqueuer no or very little sugar)

Using a whisk or electric mixer beat the cream until it start to form soft peaks, keep going until it is about double in volume. This is easier with a mixer, but does seem like a magical process to do it by hand, it will go faster if you use glass bowl inside another bowl filled with ice, remember that the volume will about double when you choose your bowl.

Once you can make that you can make home made eggnog, unless you are under 21, then just go put your whipped cream on your hot cocoa.

Eggnog

This does contain raw eggs, the alcohol may or may not neutralize any bacteria from the eggs so choose your eggs carefully. An old egg will float if you put it a bowl of water a fresh egg will sink, if they smell or look funny at all do not use them in this recipe.

8 eggs, separated
1/2 teaspoon salt
1 1/2 cup sugar
3 cups bourbon or Canadian whiskey
1/2 cup rum
3 cup milk
2 tablespoon vanilla extract
3 cup heavy cream or whipping cream
Nutmeg

Beat the egg yolks and salt together, slowly add half the sugar, stir in the bourbon, rum, milk and vanilla. Beat the egg whites til foamy, stir in the other half of the sugar and keep beating until all the sugar is incorporated. Whip the cream til double in volume. Fold the egg whites into the yolk mixture then fold in the whipped cream (mix it just so no clumps of whipped cream but don't overmix). Add a little more bourbon. Pour mixture in a punch bowl. Add a little more bourbon. Sprinkle nutmeg on top. Take a couple slugs of bourbon directly from the bottle. Now you are ready for a fun party!

I also point out that, at least in the US, there are pasturized eggs, which are a bit safer than the standard fare.

I would even go so far as to use organic eggs (if possible). After all, you are eating them raw.
