The astronomical symbol for the sun is a circle with a dot in the middle. A circle with lines coming off from it to represent sun rays is also a commonly used sun symbol... sometimes the rays are a bit ornate, and sometimes they're just simple lines. (You might consider eight lines equally spaced around the circle to represent the eight solar holidays, depending on your personal path.) Or you could draw a sun coming over the horizon to represent rebirth of the sun. A similar symbol I've seen is a sun rising out from a cauldron. Some animals are also associated with rebirth, the snake comes to mind for me, but different people hold different associations with animals, so depends on which animal makes sense to you.
Different paths can have different symbols for these things... for example, an Egyptian pagan might like to use the Akhet symbol, which is a symbol for sunset and sunrise, so has the death and rebirth elements to it. Or a stylized sun disc with an ankh (life) and/or shen (eternity). On the other hand a Norse pagan might choose to use runes. Really just depends on what has meaning to you... if you don't follow a specific tradition sometimes it's best to go with more general images and symbols, whatever you think will work best for you.
